What are kalitsounia?
Kalitsounia are small pies found across Crete in several regional variations. Some are savoury, some slightly sweet, and fillings may include fresh cheese, greens or herbs.
Ingredients for the dough
- 300 g plain flour
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- About 140 ml water
- A pinch of salt
Ingredients for the filling
- 250 g fresh mizithra-style cheese
- 1 small egg
- 1 tablespoon chopped mint, optional
- 1 teaspoon honey or sugar, optional
Prepare the dough
- Mix the flour and salt.
- Add olive oil and lemon juice.
- Add water gradually until a smooth dough forms.
- Knead briefly, cover and rest for about 30 minutes.
Prepare the filling
Mix the fresh cheese with the egg. Add mint if you want a more aromatic savoury version.
Shape and cook
- Roll the dough thinly and cut small circles.
- Place a spoonful of filling in the centre.
- Fold or pinch the edges.
- Bake at 180°C until lightly golden, or fry for a richer variation.
