Cretan Sfakian Pie Recipe: Cheese Pie With Honey

What is a Sfakian pie?

Sfakian pie is associated with the Sfakia region of southern Crete. It is a thin pan-cooked pie filled with soft cheese and commonly served with honey.

Ingredients for 4 small pies

Make the dough

  1. Mix flour and salt.
  2. Add olive oil and enough water to make a soft dough.
  3. Knead until smooth and rest for around 30 minutes.

Fill and shape

  1. Divide the dough into four pieces.
  2. Flatten one piece and place cheese in the centre.
  3. Bring the edges over the cheese and seal.
  4. Carefully flatten the filled ball into a thin round pie.

Cook in a pan

Heat a heavy frying pan over medium heat. Cook each pie on both sides until golden spots appear and the dough is cooked through.

Serve with honey

Drizzle honey over the warm pie. The mild cheese and sweet honey are what make this dish memorable.
